Admittedly it was the beautiful photography from Love & Lemons that first caught my eye but the recipe is so simple but so effective and versatile I thought I'd share it.
ingredients
any vegetables you like
fresh or dried spices
1 cup of any kind of vinegar
1 cup of mineral water
1 tablespoon of salt
1 teaspoon of sugar
method
1. wash & cut up the vegetables and pack them into a clean jar
2. add between 1/4 - 1/2 teaspoon of whole dried spice
3. combine vinegar, mineral water and salt in a medium saucepan and bring to a boil
4. put your just boiled brine over the vegetables in the jar
5. wipe any vinegar spills from the rim and put on the lid
6. place the jar in the back of the fridge for at least 1 week, 3 weeks is best
7. keep them in the fridge for up to 6 months
